Mom's Chicken Soup

A wonderfully delicious and simple Indian-inspired chicken soup. The perfect way to kick off Super Bowl Weekend - warm, hearty, and made with love.

Ingredients

Chicken Soup

  • 2pcschicken breast fillets
  • 1pcapple
  • 1pconion
  • 2tbspbutter
  • 1tbspcurry powder
  • 1dlwater (approx. 0.4 cups)
  • 800gcanned chopped tomatoes
  • 2pcsvegetable bouillon cubes
  • 3dlheavy cream (approx. 1.25 cups)
  • 1tspsugar
  • ½tspsalt
  • ¼tsppepper

Cold Cheese Cream (optional)

  • 125gcream cheese (natural)
  • 3tbspsour cream

Garnish

  • 4tbspchopped fresh herbs (parsley or cilantro)

Instructions

    Cut the chicken breast into bite-sized pieces. Peel and dice the apple into small pieces. Finely chop the onion.

    Melt the butter with the curry powder in a large pot. Quickly brown the chicken pieces and set aside.

    Sauté the apple and onion in the butter. Add the water, tomatoes, bouillon cubes, cream, and sugar. Bring to a boil and let it simmer for 5–10 minutes. Season with salt and pepper to taste.

    Cheese cream: Mix the cream cheese and sour cream until smooth. Serve the soup topped with the cheese cream, browned chicken, and a sprinkle of fresh herbs.

Freezer Tip

This soup freezes beautifully! Make a double batch and you will have a ready-made meal waiting for you in the freezer. Reheat frozen soup over medium heat in a pot.
